Default Sizing Question for track & street tires

I did a search with no real results, so forgive me if this is a duplicate post.
Driving a 2004 Z06 with stock wheels, 17x9.5" front and 18x10.5" rear.
OEM tire sizes, 265/40/17 and 295/35/18

Street Tires first.
I am looking at the BFG KDW-2, they have the rears in 295/35, but the largest 17" they make (or handled by tire rack) is 255/40/17. Would that work, and would it suffer performance using such a narror tire, how would it look?

Track tires.
BFG gForce R1, I have heard great reviews versus Hoosier and Pilot Sport Cup, want to stay away from Kumhos.
Tire Rack has the fronts in 275/40/17.
Will either of these sizes work for the rears; 285/30/18 or 275/35/18.

Please chime in on what you think.

You definitely want something wider than 285 for the rears at the track, preferably 305 or 315. The Vette can snap into oversteer so fast when applying the throttle coming out of a curve.
