I need tire help

I just purchased C6 Z06 replicas in 18x9.5 & 19x11 in factory C5 offset.
Recomended tire sizes are 275/35/18 no problem but 295/35/19 only available from BF goodrich and Yokohama.
No problem with either company, I just would like a few more options.
Can I change the tire size with out affecting the car too much?
I do not want to have to recalibrate the speedo or have any traction control issues.
Looking forward to putting the new wheels on.
