I'd just get a canon sure shot and pull the SD card when your through with your recording very easy to load on you tube etc. Not sure about the GO PRO not to mention you can mount the canon on a mount which is attached to your shark bar similar bar. If you don't have a bar to mount the camera then the Go Pro suction mount will work for you.
I just retired my JVC. I'm now using my "still" camera in HD video mode. Here's a shot of the camera mount I built. It doesn't require cutting any plastic and it doesn't interfere with the seat. When the bar is unbolted the remaining tabs are almost unnoticeable. I just pop the bar in for track day.
I have been using a Panosonic TMTZ3 still camera in high def mode. This is duct taped to my passenger seat. I think its as good or better than most video I see posted. Here is recent video from the track ..... very bumpy SOW. Be sure to click the icon lower right side to see HD

that was good video, just have to keep your a/c vents from blowing on the camera, too much wind sound but great job on video.
FOr the longest time I used a Sony 8mm cam corder. Nice thing about this unit was it has night vision. The link in my sig was shot with that camera many year ago when my car was slow.
I was actually thinking about a camera for my upcoming track day. I already have a good video camera and was wondering what you guys thought about a dash mount? I was thinking of using velcro on the camera and a small strip on the dash so its easily removable and pretty stable.. suggestions?
Or do you think it would not look as good since there is no cockpit view?
