Does anyone know of a custom interior shop, preferably in the LA area, that does interior makeovers, such as leather consoles, dashes, door panels, etc., much like Unique Autosport does on the east coast. I am talking very high quality, as opposed to the do it yourself stuff sold at aftermarket companies.

I worked down the street from them for years,seen many awesome cars pass through that shop.
Location: the GOCC are everywhere, even back from "band camp"
Hang out at car shows and ask around. See what you like and don't like. Then go talk to the shops that did the work and get some estimates. See if there is a shop you click with. Learn good upholstery from bad upholstery, look at stitching and how straight the piping is. How much do you want to spend? Same way you pick a painter.
