Use electric for the gas gauge- all you have to do is hook up the existing wire-it will use the stock sender.
Use mechanical or electric for the oil pressure gauge-I used mechnical- just a fitting on the back of the block or the electric will hook up to the existing wiring.
Use an electric(of course) for the voltmeter-stock wire hookup.
Use an electric for the water- use the sender that they include with the kit.
Some of us have installed an air/fuel ratio meter to replace the clock.
