Default Compression Ratio

Is there a way to calculate actual compression ratio? For example, my 69 has the L89 engine(not the original block). The heads are open chamber and have been worked and the pistons are 11:1. The compression tester reads between 175-195 lbs per cylinder. But what is the actual compression? Anybody? Thanks
