Haven't been to either, but...used to live in Austin back in high school/college and the belton meet had a good reputation. Don't know about how many Corvette parts will be there. Used to not be many at the local (Houston) swap meets, but now there seem to me more and more.
I just like looking at old car parts anyway, so I usually go to local swap meets if I have time.
Don't know if I'd do a three hour drive for one, there are several a year within less than an hour of Houston, but if there aren't many in your area and you have the time I think you might enjoy it.

Re: Belton & San Antonio swap meets (LT1driver)
There's a swap meet in San Antonio this weekend? That's news to me!
We're having a big Corvette show on April 12 in Boerne (northwest of S.A.), and there will be vendors, a silent auction, and a garage sale. But I don't think we'll have any tripowers or trannys...
On April 18-20 (or thereabouts) there's a big swap meet in New Braunfels, just northeast of S.A. Personally I didn't see a lot of Vette-specific stuff there last year. Just the usual garden-variety Chevy bits.

Belton is not in San Antonio - probably 3 hours up 35 depending on the traffic.
I went a couple years ago and was disappointed.

I've been to both. Never bought anything, but it's entertaining just to go. You never know when you might find something. The Belton meet is at an old wrecking yard with lots of old rusty shells sitting around. Sometimes there are some interesting vehicles for sale.
The meet in San Antonio is pretty small if it is the one on the east side of town close to the intersection of IH 10 and Loop 410.
I have plans this weekend. I wouldn't change them for either meet.

Re: Belton & San Antonio swap meets (Never Finished)
Tell 'ya what. Y'all come to our car show in Boerne (just outside S.A. on I-10) on April 12 instead. It's going to be big! And the money goes to help the kids at St. Judes Ranch for children -- this is 100% not-for-profit.
