So, what's wrong with my Holley Carb??
It's a Holley Street Avenger 670cfm sitting on a 350.
I've noticed that the choke seems to be stuck open and the car has a very tough time idling. I know it probably hasn't been properly tuned for the cold Chicago winter. I don't plan on driving it much in the cold. Does it make sense to even try to adjust the carb now, or will I be doing it again when the weather starts to warm up.
If I should be adjusting, where do I start? Remember, talk slow, I'm a beginner taking notes. :D

If the choke is stuck open then it can make for a difficult cold start and warm up. But once its warmed up to operating temp a stuck open choke should not have and adverse effect.
