Default Which thermostat should I use in South Florida ?

I've got a 69 small block, no A/C. Car has no thermostat in it now as I have discovered. Which one will keep me running cool ? Thanks

180 degree balanced stat--can be purchased from an Auto Zone or other store--not that expensive
