Default quick torque converter question...

I'm getting a 2500 stall speed converter to go with my new engine, and I see all these measurements (in inches) for the converters (ie. 10", 11", 12"). What do these measurements mean, and is there a specific one I need for my TH350, or will any fit? Any other specifics I need to know about? Do I need lock up or non lock up?

Generally, the samller the convertor is in diameter, the measurements you listed, the higher their stall speed. Any of them will fit as long as they are the right one for your particular transmission. Obviously, the smaller dimater convertors are lighter, so there's less rotating mass, and in racing applications, this is desirable as it allows the engine to acccelerate quicker.

I have always been told that the bigger the torque converter the more fluid it will hold and is better for street apps. The local tranny guy said not to go below a 10 inch converter if you driver the car on the street a lot. He said the smaller the converter the hotter( temp wise) it will run. Is this info correct?

The smaller convertors, with higher stall speeds, do generate higher tranny fluid temps, but an auxiliary tranny fluid cooler will easily maintain a normal fluid temp range is sized appropriately.
