68 vette dies after warming up

if I run heat to keep temp down she is fine. does not overheat. Just bogs down and will crank and die until temp lows after 30 min+

I thought if I put in a high flow Carb, manifold, headers, msd ignition, new pistons bored to a 383 I should be over 400hp. If I keep head and block why would I worry about hurting value? Numbers...
