Same setup as yours as far as Th350, 400hp 383 goes except with 3.55 gears and mine is a 2700-3000 stall and runs just fine.. Nothing "unpleasant" at all..

3.73s wont cut that in half as it isn't like going from 3.55s to 4.11s or 4.56s.. You'll see a little jump but not very noticeable. I've stuck with my 3.55s in my 79 and avg 12-14 mpg with a 400 hp...

Thank you! At least I wasnt the only one thinking $1300 was a bit pricey for gears.. I paid $370 for my 4.11s from Yukon Gear and Axle and paid $250 to get it put in..
