Seems like an awful lot of work for a color that would hide paint flaws better than any other color. I could understand a little more if the car was older and black, but.... damn.

It's WAYYYY more work than it looks. I detailed for 2 years and the worst job I can remember entailed 10 hours of polishing. Your body is pretty beat after that. It's also significantly less fun when you know you can't take the car out and enjoy it after all the work.
In short, I love detailing my own car, but believe me...Doing it for other people (especially ones who may not necessarily be as meticulous and careful as most of us on here) gets old and annoying fast.
I've read a lot of these types of threads, and one thing's for sure - I haven't seen a fat detailer yet.
