    D C,
It sort of depends on where you live. Usually one of the best ways to get your feet wet is to sign up for an HPDE put on by a chapter of one of the recognized national clubs; BMW, PCA, Audi, etc. I know they train their instructors and most of the clubs run well-organized events that emphasize safety and having fun. As a Novice driver, you will be assigned to a group for Novice Drivers and will be assigned an instructor for the weekend. Depending on the track where the event is being run entry fees will be in the $500 to $700 range for a two-day event.

I don't recommend signing up for an event where instructors aren't required for Novices. That is usually a way to bake in a lot of bad driving habits which you eventually have to unlearn. One thing that you can do is try some low-speed autocross if there are any SCCA regional clubs running them near you. Autocrossing will give you some flavor for how your car handles at low speed when going around tight corners.
