Default Hot 350

I recently rebuilt the 350 in my 61 vette,nothing to extreme just a better cam and new heads. Put the thing back together and now the temp gauge pegs at 220. Installed new water pump/no help. Checked water temp with fingers and it couldn't have been that hot! how do you check temp sending switch to see if it is correct? Do you put thread sealant on switch or will that give a false reading? thanks, Ron
