How many guys lower their cars for the track?
My 2003 Z06 is still at stock height, but I'm thinking of lowering it a little for a better look and hopefully a little better handling. I run Autocross events and am planning on at least one or two track days per year at Watkins Glen. Does lowering cause a problem when you hit the curbs at a place like WGI? (I'm thinking of the curbs at the bus stop). Thanks.

I agree, just be symmetric (or use scales if you have them), and don't lower rear more than front (often can be done). Any lower than that will hurt handling with drop spindles.
Curbs shouldn't be a problem in general, inside tires are nearly unloaded at apex and should skim right over

depends on the car, I did not do it to my c6-z and sitting still it looks a bit high but here is a picture from Monicello running stock runflat tires I was still able to bury the suspension pretty deep. If it started lower with the same spring rate it would have bottomed which could upset the car.

When lowering on stock bolts, how low to go? 1/2", 3/4", all the way? Do small adjustments in lowering make a difference in handling?

When lowered properly it is a benefit. Maintain travel and have static ride height at the center of travel for the shock/coilover you should be fine.
I have my frame rails 3.25" from the ground and my splitter is about 2.5" and when I go over the rumble strips at the Glen no issues.
Going into the Bus Stop my left sides are on the rumble strips to give you an idea of how far up on the strips you can get.
Coming out of 1 and 10 I have straddled them many times, no rubbing.
