Mobil 1... (I know boring.. works for me. change it after every one or two track days and it's all good).

I use Red Line 0W40 oil for both daily driving and track days.

Pick any decent name-brand oil - Mobil, Amsoil, Redline, Penzoil etc. It really doesn't matter as long as you change the oil/filter at intervals appropriate to how hard you are running it.

Unfortunately, that's no longer true.

In recent years, Mobil and other main line oil suppliers have been following EPA directives and they have significantly reduced the Zinc and Phosphorous in their oils.

These two elements are important ingredients in oil for their anti-wear properties.

Just compare the amount of Zinc and Phosphorous in Mobil 1 versus Red Line or AMSOIL.

For the above post, you can use extended oil change oil or oil for higher mileage vehicles, which have higher zinc and phosphorous in them.

I use Shell 0w40 for diesels, 5w30 Mobil1, Amsoil 0w40 or some of those variants. Right now, my Vette has 4L of 5w30 Mobil1 + 1L 20w50 Amsoil.

There is some evidence somewhere and it's related to valve, rockers or something like that. Do a search, there really is a potential problem with the lower contents on certain types of engine configurations.

I've used Mobil 1 5-40, Royal Purple 10-40, Pennzoil Ultra Euro 5-40.

All did well in my LS6 Z28 with no oil cooler.

I change mine after every 2 events or 5000 miles whichever comes first.

The Royal Purple is harder to find in 10-40, the Pennzoil Ultra Euro is not available on shelves, I have to order it.

I will most likely stay with the Mobil 1 as you can catch it on sale anywhere.

I just did my first change in my GS and went with RedLine 5w30. I'll only do hpde and street driving, hoping this will hold up well for both. I asked a rep at RedLine and he said it should hold up to around 280 degree temps, so I think it'll work ok even if I have to do a cool down lap mid session. I debated on the 0w40 but wasn't sure if it'd be a bit on the thick side for the cooler months. I may switch to it tho if the car starts to see a lot of track time.

Actually I'm using 10-40 and might switch to 5-30 in the winter
My car is in a heated garage so thicker oil doesn't seem to be a problem

I've been using Redline for a dozen years since I track the cars.
5w-40
Getting expensive at almost $12/qt, but if it saves an engine, it's inexpensive insurance.

Assuming you are willing to step away from GM's recommendation for dexos1 oil for a track day, I'd consider this:
AMSOIL Z-ROD 10w30 Synthetic Motor Oil (Product Code ZRTQT)
(zinc – 1440 ppm, phosphorus 1320 ppm)

The Z-ROD is near the top end of the 30 grade band, has lots of ZDDP, and is very similar to the AMSOI Dominator Racing 10w30 I use in my 02 Z06 at the track. But the Z-ROD has some detergent/dispersant and is good for about 3-5k mile oil change intervals (or one year whichever first) whereas I change the racing oil at about 500 mile intervals.

This assume an oil temp no hotter than 245-255F or so. Higher than that and I'd consider this:
AMSOIL SAE Synthetic Premium Protection 10w40 (Product Code AMOQT)
(zinc – 1378 ppm, phosphorus 1265 ppm)

I used this oil from about 04-07 when AMSOIL came out with their Dominator Racing line and I switched to the 10w30. With my oil cooler set and larger than stock radiator, my water temp is consistently below 220F and my oil temp is almost always 245-255F even in very hot weather.

Has anyone tried the 10-60 oil for BMW M3s? It was specifically developed to provide greater film strength for bearing surfaces under high temperatures when the early E46 M3s were ruining engines on track days.

Expensive, but I have a case or two left from my M3 which is now sold.

I used Mobil 1 15-50 in my LS2 402 on the track as I wanted thicker oil for the 280-300 deg oil temps we got in Az.
