I would avoid driving the car on summer only tires in temps below 40*. I swapped the tires on my C7 to A/S ones and have had no problems.

I've put 4,000 miles on mine, since last November, in Canada.
I avoid driving in poor road conditions, snow, ice, road salt, brine, gravel, dirt, whatever.
I try not to drive in temps below 40F, but if they're already warmed up, I'll drive a few degrees below to get them home, for example.
I also wait until they warm up from rolling, before driving more aggressively above 40F.
I also cold inflate them to 32PSI to compensate for the 2 PSI underinflated they'll be, in temps approaching 40F.
12F degrees ~= 1 PSI pressure loss/gain.
No problems, so far.

No problem with mine in the winter months. Indeed it is still winter but I live in SW Fl and it is 81* right now.

Yes! I had to get pretty creative with how I cut the tires up to fit. I suggest cutting the fronts into 4 pizza slices. but with the width of the rears, you have to slice them in half down the tread first, then each half into 4 pizza slices. I did have 1 segment not fit, so I put it in the space under the tonneau cover with the HTC roof up.

funny comment but actually I used to carry a box cutter in a Porsche as if you took off a tire and put on a donut the tire/wheel would not fit inside so you needed to cut the tire off the rim and then it could fit the rim on the passenger seat. Totally shredded a tire leaving Pocono after an AMG event and hit a bolt while mixing it up on route 80. Cut the tire off wrapped the rim in a garbage bag on the passenger seat and drove home at 50 with the donut-

My previous daily drivers were Honda Accords and CRV. With both those cars I have all season and winter tires. I found the C8 All Season good in the snow. I have driven th C8 Z51 in cold and light snow and its a nightmare. The nice thing in having two sets of tires that are specifically designed for certain temperatures is that extends the life of both sets of tires so swapping back and forth I get about 10 years out of each set and that is longer than I would have them for 1 set.
Note the A/S are rated for 50,000 km while the Perf rated for 30,000 km so you are saving money by used an A/S when warranted and during that time you probably are not needing the superior performance.

If you can see your breath the Z51 tires are bricks. You can drive safely on them but the available traction is greatly reduced. Cold + wet is even worse. Most sane people understand this and it is not an issue. If you're careless, they will bite you.
If snow is in the mix then you should be changing tires for that.

I live in Minnesota. I don't have much experience with the C8 yet, but my C7 was a Z51 with the summer only tires. I often do drive when under 40 degrees but generally, but not always stick to above freezing and dry. In the C7 i did see a noticeable loss of traction in that 32 to 40 range, but i didn't feel unsafe for just cruising. My Corvettes have always been stored for the winter and I wouldn't be out in the snow regardless of what tires I had (though it has happened by accident a time or two).
All that said when it came time to replace the tires on the C7, i did switch to the AS4's that come OEM on the C8. in summer, i really didnt notice a big difference. I was going from completely shot summer only to brand new all season, so that could be a factor there. Main reason I went all season was to extend my season later into the fall and be out earlier in the spring. Even with the AS4's, i didn't go out if there was any chance of encountering snow or ice. On our roads here, there will be sand and salt slurry when it snows and sometimes they pre-treat the roads before it snows. After a snow, even after the roads are cleared, it's going to be a salty, sandy mess that I don't want to drive the Corvette in for a while. But it's our third vehical after my wife's AWD Infiniti and my Ram 2500 so I have plenty of transportation options.
On the C8, i'm certainly not going to replace the summer only tires until they wear out. At that point I'll most likely go AS again.

Thanks - the trip from the dealer yesterday was 50F ... so I had no concerns because of all the input frm you guys ... thanks - the C8 is a beast - had a blast on the 100 mile trip home ... just have to figure out all of the stuff.
btw, I purchased at ciocca AC off the lot ... 2k off msrp seems like a good number these days in my area.
