True, but we can offset such intrusions by taking the time to know what we are signing for. Unfortunately, we are living in a world where offering one's unconditional trust can be a mistake.

Heads up if you haven't seen this.. even after my OnStar initial trial was over, I checked the MyChevrolet app and noticed that they are tracking and reporting driving habits including what they consider hard acceleration and hard braking events. I disabled this in the app by going to "more" in the bottom right and then unenrolling from Chevrolet Smart Driver. It was on by default in my case. A few of my friends mentioned their information has been sold and even ended up on their credit report in some cases as C8 owners.
They literally assign you a driving score!

How is this even legal? I mean when I download an app I acknowledge a bunch of mumbo jumbo and click "ok", but having my driving habits pulled and disseminated to insurance companies is beyond ridiculous. Is it being sold to insurance companies? Is it the highest bidder?

Mine offers me to activate OnStar safety and security services. Apparently never was activated, even though i was signed up for the onstar trial a month before my Corvette was delivered, not sure by whom.
The app has my car in it, but doesn't even know the mileage.

Most people don't read and understand what they are agreeing to. We trade convenience for our data without caring who gets the data or what they do with it.
And I'll bet more than 99% of us will do nothing even after being mildly annoyed after reading this thread. No writing our congresspeople, no complaining to the data collector or the data buyer.
If you do care, the Electronic Frontier Foundation is one organization that makes an effort to protect your digital rights.
This article is a few years old. It discusses some of what is collected and who owns it.

When I took delivery the sales rep was taking me through all the features and helped me pair my iPhone and activate OnStar. While setting up OnStar it asked if I want to enable Smart Driver he declined it then said to me, “never enroll in that given you’ll want to drive this car like your stole it”. He then chuckled.

This feature has been used to prove someone at the dealer drove a car like they stole it. In one case, the oil change tech took a C8 for a test drive, and then, deleted the PDR data recorded by the car. The owner was able to prove there was a 25 minute test drive with 70+ hard accelerations and hard brakes, along with a certain percentage of the time above 80 MPH because he had this feature turned on in his smartphone App.
Something to consider for those who are paranoid of big brother reporting their driving habits to insurance companies.

Seems like a short term gain, long term loss if they’re selling to insurance companies at the expense of their direct customers.

But as to car companies being the worst, I think with all the "apps" and the cell phone companies themselves, our cell phones may do even more "watching and logging" info than the car companies.* Just my WAG (wild a$$ guess)..
* I just installed a cell ph. app for a parking lot service. I swear if I gave it a chance, it'd tell me what I had for any meal and its nutritional value.
