hopefully this is not to much of a dumb question : does a lower profile rear wing come standard on a trim level like the Z51 or is it always a option I understand that the high wing is an option

The regular car comes with no spoiler. If you get a Z51, by default you get that wing.
Both the high wing and the low-profile spoiler are options you can get which either add to the base car, or override the Z51 wing.
The Z51 wing is body-colored by default. There's a $100 option for carbon flash (black) mirrors, which also turns the Z51 wing black. Another option is "aero delete", which removes the wing and front splitter on Z51 cars. There is no factory way to get the Z51 wing other than getting the Z51 package itself, but there are aftermarket folks that make duplicates.
