If you stay off the strip, that's what you're going to get. Shoot, if you stay at Excalibur or Luxor ON the strip, you'll probably pick up crabs.
Honestly, if you can afford to fly to Vegas for a "Corvette Owners Driving School" after purchasing a new C8 Corvette, you can afford to stay on the strip. Book a basic room at Mandalay Bay and you'll be happy and close to rental car return and the airport. Just my $.02

2020 C8 of the Year Finalist - Unmodified
The Red Rock Casino and Hotel is very nice. It's not super expensive, has good restaurants, and is a straight shot to Spring Mountain. It is located in Summerlin which is due west of the strip and will knock a half hour off the trip to the track vs a strip hotel. Shopping nearby for the wife.
If you want to do the strip, you can't go wrong with the Wynn or Encore.

I've booked my Spring Mountain C8 driving school and plan to fly out of the "Harry Reid" (new name - not official yet) airport the day after the school ends. I've seen a few posts stating that members weren't really happy with the hotel recommendation from Spring Mountain - The Silverton. After reading their reviews, as an ex-smoker - I saw several reviews about the smell and I know that's prevalent in casino resorts - I really don't want to stay there. Does anyone have a recommendation for a nice hotel not too far off the strip and fairly near the airport? My flight out isn't until noon the day I leave.

Yep. I like the M. if you wanted something not far from the airport and on the way to Spring Mountain, both South Point and the M would do.

Red Rock averages about $150 a night. Wynn/Encore is well over $200. Rates have gone up considerably over the last few months.

In Vancouver, restaurants, casinos, bars, workplaces, public buildings are completely non-smoking so our trips to Las Vegas became bothering due to smoke. First trip seemed OK but gradually we began to dislike the stink. The problem with most casino/hotels is that even non-smoking you need to go through a casino to get to the hotel and then some rooms allowed smoking so hallways etc stunk.
The best one we found is Vdara. You dont have to go through the casino and the entire hotel is non-smoking with a big fine for anyone smoking in the rooms or on-site. Our room/suite was great. It was a breath of fresh air.
Plus if you enjoy the noise and smell of fear in a casino the Bellagio is connected through an indoor, 5 minute walkway and Aria casino is across the street. about 3 minutes. Vdara is 10 minutes drive to the airport.

Here's one more outlier. The Orlean's on west Tropicana is a twin to Southpoint. They were both built and designed by the same owner. He first built the Orlean's and went on to do Southpoint. He wound up selling the Orlean's to Boyd gaming. The hotel rooms are almost identical, as are the restaurants. Prices for rooms and food are also comparable. The overall experience is comparable. The Orlean's is a little closer to the main action of the Strip.

Vdara hotel is really nice because it doesn't have a casino so you won't have to deal with any smoke. It's on strip, but may be something for you to consider since there's no casino. The lobby is quiet and I often just see people working or eating in the cafe.
It's nice that it's also located at city center so there's a lot to see and do right outside of the hotel.
My parents really appreciated staying here with us and we'd go back again.

I stayed at Excalibur ONCE and, well…it’s Excalibur. The phone in my room was screwed to the end table with 4 drywall screws. Enough said.

Well... if you have a car, rental or otherwise, stay at an mgm property like Mandalay Bay or Bellagio and your parking pass is good for all other MGM property garages as well.
Bellagio is very centrally located for walking.
Venetian is nice. You may not feel the need to leave the hotel.
Don't bother staying off strip. Most weeks, depending on when you go, and which hotel you pick, sun through thurs is 60% off. Try not to stay fri or sat, and if you have to, make those cheaper hotels or otherwise shop around to see who is cheaper for fri and sat that week. It might surprise you.
Last time I visited, the most cost effective options were Mandalay Bay during the week and the Venetian for the weekend. Out of the hotels I would stay at anyway.
