No stereo sound with iPhone CarPlay and Spotify

First reboot your phone, always try a reboot first. Next check your phone's Bluetooth settings and make sure you allow media. Not sure that will work, but that would be the next thing I would try. If that doesn't work try deleting the phone from the Infotainment system and the Car from the phone and re-pair the phone to the Infotainment system.
EDIT: just re-read that you are good with Bluetooth. Have you tried another cable? I'd still suggest a reboot.

My guess is that something else is running on your phone that is taking precedence over the music so it's treating the music like a navigation voice or a secondary sound source. I agree with the reboot the phone advice and/or a new cable if you're using a wired CarPlay connection.

Delete the Carplay app and Spotify from the phone, and reinstall. I've also found that the Chevy is much more finicky about cables. Aftermarket are hit or miss, even if they work with out devices or cars.
With my Android I had to tell the phone what to do when it was connected by USB (C7) (may not apply at all to an Apple product) I had to set it up to transfer files. It's a moot point with my '21 It's wireless and works perfectly.

Another thing you could try is using another iPhone and see if the issue is the same.

I've seen this issue on the Spotify forums before - do what they call a "clean install" of the Spotify app and you should be good. Link below :

I first noticed this when using CarPlay and Google maps NAV. I know it is because of the NAV interaction somehow. And apparently there is no way to just change the audio. Will check into that Spotify link and keep fumbling around.It is the wired CarPlay and I do have an Apple cable.
