Why wouldn't Chevy let me sit in the C8?
Asian male late 20s mask on, gloves on, dress shirt and slacks went to see the C8 @ Sterling McCall Chevrolet in Houston as it was the only location in Houston with the C8 available. I asked if I can sit in one on the showroom and just to see what its like, and got told a flat NO. Lexus dealer had no problem letting me sit inside the LC500. I thought this was the working man's sports car? What a joke!

Not at all surprising. Most Corvette buyers don't want a car that has had everybody and their cousin sitting in it. When they become more common you will find dealerships that will even let you test drive one - but not currently.

I know why but I'll never tell.

Most dealerships suck. Bought my first C5 Z06 back in 2003 when I was 21 still. I was treated like crap whenever I brought it in for service work. I had an oil burner and had to go through the re-ring process under warranty and knew more about it than the entire service department. They looked at me like I had a 3rd eye. I finally found a better dealer who did awesome work and a Corvette tech who told me "So long as you don't spray it, I'll get whatever you break fixed under warranty".
End of the day it's the dealership.

Chevy had nothing to do with it. That was made by the dealer. More specifically, it was the sales person you dealt with. If you had seen the cars that toured, you would understand why. They 30-100k a month sitting in them. The seats were severally worn.
If you posted in the internet that dealer had allowed you to sit in the car without drawing up a contract, everyone and the uncle and aunt and siblings and cousins would be there within an hour to sit in the car. If not allowed they would be very angry. And posting all about how they were discriminated against because of whatever reason they could imagine (see your second post).
it is a no win situation, so nobody gets to sit in it.
if you had written a contract on the car and passed a credit check or had proof of funds and said I won’t sign unless I get to inspect it and sit in it, then you probably would have been able to sit in their car.

Just the Facts
Most all I wanna test drive or test seat are lookie loos. Is that you? They will wear out a demo car and then buy a used Corolla next door. Find a friend who has pulled the trigger. Maybe he'll let you fire his gun.

A Chevy dealer is not "Chevy"
I think the world of Covid 19 has changed everything.

I have bought a few vehicles without even sitting in one. I don't think not sitting in one is going to be a deal breaker. After all, any car nowadays has infinite number of adjustments to seating. And on the other side of things, is a particular seat really going to make you fall in love with the rest of the car's attributes? Personally, I have found it takes several days of driving to get a new car's seat just right anyway.

The car is probably sold and the rep was not allowing anybody to sit in it out of respect for the customer. But - if that's the case, it'd be easy for him to just say that.

It was on the showroom so I'm not sure if it was sold of not, but overall I'm just dissapointed. It's a mass produced vehicle not some of one a kind Ferrari or Bugatti. It's not like I dressed like some hoodlum either.

Minh, many dealerships will not allow people to sit in a new C8-especially during this pandemic. Don't take this badly-I couldn't sit in one either.
