Is anyone using E85 for track days?
I understand that e85 gives more power, but less mileage. Wondering if the e85 will keep the knock lower and dont lose power with the supercharger heat.

Without knowing the mods on your C7Z will limit how accurate any suggestions will be. E85 will possibly need to be blended at some ratio between E40 to E60. When you say track days are we talking road course or 1/4 mile? There are some pro's and con's for sure, E85 doesnt have to add massive power, the tuner can always dial back the E85 timing tables and utilize the E85 for cylinder cooling and knock prevention.

Pretty sure you need a flex fuel sensor and a tune.

Worth the investment. You will need to bring the e85 with you to most track. I operate in Cali, and I bring it with.
It is absolutely worth it even if you did not track the car.
The data-backed truth is that at 91 octane (you may have 93 in texas) the car is consistently going to be retarding timing. I proved it with my logs from HP tuners, and others have noticed as well. IT may be that 93 on a stock untouched tune may be "better" but with e50 (tune, sensor, and 9 gallons of e85 with the rest 91/93 you will get more power.
Even on untuned cars, with no sensor, you can go up to about 4 gallons or experiment yourself with e85 like I did. I found that it reduced or eliminated detonation and the resultant retard.

E 85 definitely helps to make more power, but as others have said you have to mod the car and tune for it. It's been one of the best things I've done to my 16 Z06, but I really only drag race that car anymore. Maybe an AutoX once in a while, but mostly drag and DD. If and/or when, I ever choose to mod my 19 ZR1 it will be the first thing I do to it. Yes it doesn't go as far as 93, but it's also less expensive than 93.
