Has anyone done a similar setup? dropping the car off tomorrow and just wanted to see what results other have gotten from a similar build

I have the headers, CAI, and flex fuel sensor. On E my car ran out of fuel above E-55. I would presume yours will not be able to run much E with the pulley without fuel system modifications. On a Mustang dyne mine made 642/660

Seems like a nice setup. Why 1 7/8 headers?

My FBO setup:
2019 Z06/Z07:
AFE Intake
NW 103 TB
Ported Blower
18% lower
ARH 2" long tubes
100 octane tune (only run 100 octane)
A8 tuned
700rwhp / 740rwtq

I agree with DTOM, I would get the 2" headers. That would be beneficial in the future for additional mods, such as a ported blower or cam.
