edspec- as joemessman said, your car should have the latest programming for all modes. Congrats!
vettrebob2- Others will weigh in with better ideas, but I'll start with:
1. Drive down a road that has expansion joints or tar strips that give the suspension a noticeable-but-not-huge bump on a regular basis. Switch from Tour to Track after a minute and see what you notice.
If the road is really rough or really smooth, it's harder to tell the difference. Be sure tire pressures are set properly.
2. Look in the Owner Manual and find the fuse for the Mag Ride, check that it's in place and not blown.
3. See if you can find someone with the same year/model car with Mag Ride and same tires as you, ask him to give you a ride on that jointed road and see how it feels. You don't need to drive his car, just riding in the passenger seat should be enough. If he has time, ask him to drive your car while you sit in your passenger seat.

I am the right guy to answer this question. I have a 2lt MY 19'. It does not have true Magnetic Ride Control. So, selecting "track" mode makes no difference in the shock control and only a minimal stiffening of the steering response...and yes the exhaust is only slightly louder,
I also have an Audi S5 convertible that comes standard with "Sport" selection of the drive mode.... on THAT car, when I select "performance" mode there is a HUGE difference in ALL the settings....Steering...Exhaust...and the SHOCKS! And the difference is huge...especially in the way TRUE mag shocks work. VERY FIRM and controlled! If you have true Magnetic Ride Control in ANY car, you know it - and use it... it is THE BEST!

I am going to sound ignorant asking this but will suffer the consequences anyway.
Does the suspension(ride) change between the different modes? I will assume the 'Track' mode might/would be stiffer....or is it. Don't use it so not sure.
I do alternate between Touring and Sport and definitely hear the exhaust difference. But I don't really feel the difference in the suspension(ride). Is there really a difference.

You should feel a big difference between Tour and Track. Sport is somewhere in between so depending on the road the difference in that particular mode might not jump out right away. I'd confirm you actually have mag-ride, it was an option so not all Z51s have it. I'd also check that the tire pressures are correct before going too far down a rabbit hole.

Since there have been several responses wanting to make sure I truly do have MAGNETIC RIDE; a valid inquiry.

Looks like you have it. Apart from the obvious, a malfunction, you might want to go into the menus and make sure that the previous owner didn’t implement some sort of weird customization of the MSRC. I actually can’t imagine what that would be but it’s worth a check.

I got mine update as a part of the deal.
If it's anything like my Camaro, the suspension will still be a bit stiff in Touring mode, it just won't be as stiff as it will be in Sport or Track. It's just the way it is, as the spring is still plenty stiff.

I see no mention of this issue affecting a 2019 Grand Sport. Is it because this upgrade is part of the 2019 GS built? But when I'm in Eco mode the dial up gauge that shows estimated distance left shows V8 vice V4.

My GS is a 2019 so it came with the latest software and there is no mistaking the different modes. I’m not sure how distinct the modes are with the original software.
Do you know for a fact that you have Mag Ride? Don’t be confused by the presence of the control ****, all C7 Corvettes have the ****. Mag Ride is not standard on the Stingray or Stingray Z51, it’s an extra cost option. With or without Mag Ride the **** looks the same however its functionality is different between cars with and without mag ride.
