Many high-end hotels have “valet only” parking. The question is, would you stay at a hotel that only allows valet parking only or stay elsewhere?

I would. It’s a car, and it’s a lot less valuable than some cars at those kinds of places.

I have and most valet parking businesses have ample parking for my vette or any other sports cars. Yes I do have concerns when leaving my car with a stranger but I don't loose any sleep over it.

I wouldn't but it is a lifestyle thing not a don't-touch-my-Corvette thing. I've never stayed at a hotel that only has valet parking, regardless of whether I owned a Corvette or not. Vacations for me are for about doing something or seeing something. The hotel needs to be clean and quiet and let me do things like recharge my camera equipment. Fancy never really enters into the equation.
Plus, even if I did break character and stay somewhere like that, it would be very likely that I'd have flown there instead of driven. In which case, sure, the valet can park my rental car.

I'd be a lot more comfortable handing the keys over if valet mode locked the driving mode and restricted rpm/power to something restrictive enough to discourage a Ferris Bueller event.

I would not. I'd rather park it myself than watch some kid rev it to 3,000 RPM to get it rolling, adjusting the seat and mirrors.
Since it's "just a depreciating car", then I guess I will park it. If it were some super special vehicle, then of course I'd have to let the 20 year old professional do it. Most definitely. For sure.

Same here. I don't care if they park my Volt, but touch the Vette, no way if I can avoid it. Had no choice a couple of weeks ago and set the PDR to record in valet mode. All was good and the video was fun to watch. Didn't sleep well that night though. Had too many other cars damaged by valets. Good luck proving so I just practice avoidance.

No, as I like the freedom of not being dependent upon someone else bringing my car when I need it, I don't like being dictated to by an establishment I'm giving my business to and don't like trusting my car to some kid I don't know.

I did it in Nashville before I had 100 miles on her after picking her up at the museum. Extra 20 had her parked up front. I’d be more worried about what might happen in a parking lot of a hotel that didn’t have valet.

I am sure they would let me park it, for them in Valet parking. Never been to a hotel with Valet parking in the Corvette.
Did in South Beach stay at a hotel that was Valet parking only. Wife and I pulled up on our Harleys. After some discussion, they decided to let us park our bikes in their Valet parking.
Seriously, I doubt I would have an issue with a hotel Valet parking my Corvette.

Valet is a fun thing. A lot of them, the stub they hand you says the valet is an agent of you. "we are not responsible". Couple that with the valet being a contracted business.
Your insurance will not cover an agent unless named. Fun stuff. Most hotels though are stand up and will handle things
