Clicking brakes, which they seem to have done on 3 separate occasions now.
This is my 3rd C7, 2 were 16's so I could be thinking of valet on those. I have tried valet mode myself and have audio,but they did just perform an update due to my gauges freezing .

This is actually a good idea.
Since the car is touted as track ready the 80 mph excuse is patently bogus. The ride along idea is one solution. Any place nearby where the car can be put on a dyno and run up to that speed if they are sticking to the excuse? May be time to get a lemon lawyer involved, or threaten to do so at least. Good luck.

There are several states with 80 or 80+ speed limits. What about putting it on a lift and seeing what you find or see? I'm sure there must be some Vet expert in your area who would be willing to take a look.

Not sure what 2 you're talking about. My PDR records sound and KPH is still not impressive. Is that what you meant there Woodson?
My 2016 doesn't disable the sound. Thanks for the heads up. I don't want the PDR update that disables the sound. I can always strip the sound myself if necessary thank you very much.

Allow me if I may shed some light on this before you dig yourself into a deeper hole.
Mr. Woodson posted the screen shot of his PDR of a GM tech doing almost 100 mph in his car when he dropped it off to get some work done to it. Now I don't know what world you live in but here, on Earth, there is absolutely no need for a GM tech to do 100 on a (as you can see) crowed public road in a customer's car. Woodson wasn't boasting that he could do 157 km/h like you seem to think was.

My 2016 does not record audio.
If it would have had to have been updated, how can I find out? It means the dealer did it without my express authorization and without advising me it was done. Is this update part of a recall or TSB?

Tell them you need it fixed as you are planning a trip to Oregon through Idaho and Utah. That is a lot of miles of 80 MPH speed limit. It would be very annoying if not fixed.

Just brought it to a different dealership, they wouldn’t take it into service, they said they can not go over the speed limit. This is becoming a 75k joke.

I have thought of that as well. There answer to my cell phone videos are, “the tech has to hear the noise for h8mself so he knows where to look, my tech can’t locate a noise from a video.
I have over 20 videos of my screen cluster going black just driving down the highway, completely black. Guess what isn’t fixed, because they can not duplicate the problem when my car is in for service, it doesn’t do it.

Funny you mention this. I actually said something in this regard. Chevy didn’t seem to care me bit.

What I would do is take it out on the open road and drive the hell out of it. If it's as bad as you say the offending part is going to break or the sounds will begin to happen at lower speeds. With 3 years of full warranty something is going to give.

Check your states lemon laws. In many, 20+ days of dealer service qualifies it for lemon law in which case you may have a bargaining chip to force GM to be a bit more friendly, something they are loath to be after being paid.

I'd like to see the OP made whole and believe he should be, given what a Corvette is supposed to be capable of and how they are marketed.
That said, I have to wonder how a BBB complaint and/or Lemon Law case is going to be viewed when said problem only occurs above the legal speed limit of most places in the US, including the area in which the OP lives. Someone get Steve Lehto on the horn!
