Should I be worried....

As the majority have stated here, that is not a good deal. Push for at least 15% off MSRP.
I would want closer to 18% if it were me in your shoes.

we had almost the exact situation when we bought my wife's 2016 SS. It had been out front of the showroom for months, and had about 80 miles on it. We got it during the red tag sale, and they discounted it even further based on our concerns.
It has been great (10k miles now). The only real issues were some paint blemishes that were on the car from sitting outside in front for so long. They couldnt detail them out, so we ended up getting them to repaint the car.

a YARD MULE. every vette wannabe test driver got in, pulled out on the street and the salesman said "kick it!" "YEE HAW!" said the vette tester, and then they got the cruze his wife and him really came to buy. Dealer: repeat 8 times, sell car as "new" yeah, right.

I drove from Alabama to Manitowoc,WI,Indianapolis,IN,and, Gaithersburg,MD, to get the last 3 exact Corvettes that I wanted, and, only got 1 great deal out of it.
So, if your heart is set on that GS, go get it.
Ask about any other factory incentives that might be lurking unseen.

Sounds like a great opportunity to push for a real bargain basement price

8% off retail is NOT a good deal. Twice that is more like it. If you are trying to find EXACTLY what you want on a dealer lot, you'll likely be forced to compromise on something. Don't expect to. If you are dead set on your EXACT specifications, order the car. Even then you should expect to get at least 12% off MSRP. The "deal" you have described is no good. Dump it.

If it is in great shape I would say at least 15% off!

A month or so ago I saw that MacMulkin Chevrolet was giving 17% of MSRP on any cars on the lot.

I assume from the $86k+ MSRP price it's a GS and loaded up at that. In my recent nationwide search I found that dealers weren't discounting GSs and ZO6s as much as Z51s and Stingrays but having said that you should expect about 11% or 12% off MSRP, especially on one at the higher end of the price scale. As others have said, $7000 off isn't a particularly good discount on that car and I bet they will go to 12% off if you hold firm.
If you are going to inspect the car, do so closely and you should be able to insure it's ok.
I wouldn't worry a bit about the 79 miles as it's not that much. A company executive taking the car home for a weekend or taking his wife out to dinner a couple times could account for that.
I did find some 15% to 17% off 'deals' out there but they were on the less desirable cars, besides I was more looking for what I wanted then the cheapest car, sounds like you are too.
You could wait until the factory opens back up and order just want you want, however how much backlog are they going to have after not producing cars for months? Delivery could take a while.

Even the newly built cars sit out in the open lot at the assembly plant for several weeks just in case they find a problem on the line that they can correct before it ships.

Trying very hard not to sound like a wise-a** and probably failing miserably--it's a car. My C7 sits outside 24/7 from the day I picked it up at the NACM on February 5, 2015 to the present. In fact it had 6" of snow on it when we got a snow storm in the last week of February 2015.
I would hope any dealer worth a hoot can clean up a car and it should look great. Not sure what price I'd pay and the 79 miles are nothing. If the miles bugs you, order one and pay for the RC8 delivery option. There won't be any excess miles on the clock, and those guys up in Bowling Green do a great job with PDI.

Sitting outside won't have harmed it.
The 79 miles might have.
It really depends on whether those 79 miles were the dealer principal's wife going to church 39.5 miles away and back one time, or was it 30 eager Corvette test drivers?
Could be nothing to worry about at all, I just don't know how you tell the difference!

Hi all, I am looking at a 2017 Grand Sport that has been sitting on the lot for 6 and a half months and has 79 miles. Should I be worried at all about mileage or length of time on the lot?. The salesman says it is in perfect shape. It is a 5 hour drive for me and when it has been sitting that long I worry about dried water spots and such from washing outside. Thoughts or advice would be appreciated.

Drove by my local Chevy dealer every morning for months and saw the exact car that I would order sitting on the lot. Just for "ha ha's" I brought my C6 GS in and worked a trade-in deal. The car had 71 miles on the odometer but I didn't give it a second thought. I think that the fact that the car was there for so long allowed them to make, what I thought, was a great deal.
Don't let the 79 miles on the car bother you. Make the offer and let them respond.

The price they're offering is extremely unimpressive. That said, the concerns with sitting are unfounded imo. More of the cars on this forum than not are likely garage queens, and I'm sure there's no adverse effects. 79 miles, even if they were somewhat abusive shouldn't massively effect this cars value. It's supposed to be a world class performance machine. As such, there are bigger problems to address if 79 hard miles cause damage. My advice is that if it's the car you've been searching for, see if you can make a fair deal. I'd even encourage trumping up the concerns you have, just to see if it helps motivate them. $7000 off msrp is not a deal by any stretch though. As others have said, the volume dealers are advertising 10+% off and that's before you even start negotiating.

The discounts a month ago and the discounts today have changed substantially due to the plant being shut down. It's the most desirable time of year to OWN a vette but not the best time of year to BUY a vette. If you want to have the vette for the summer, then it's really not a bad deal based on the timing but if you don't care about missing the summer, there will be much better deals come late fall on the leftover 2017's and most likely when the 2018's come back on line, a $7k discount will be the on the low end of discounts on an $86k list price car.
79 miles is nothing. If 10 people took it out for a test drive and drove over the 6 months that it sat on the lot and drove 4 miles out and 4 miles back...I wouldn't be concerned at all.
Good Luck on your quest!
