The "exposed" carbon fiber roof is most likely clear coated. I doubt the resin system is a polyester and is most likely epoxy which is not UV stable and requires a clear coat. You should be able to clean, polish and wax it just like any body panel.
If the roof panel were more delicate, they would mention it in the manual.

The "exposed" carbon fiber roof is indeed clear coated - with a very expensive UV inhibitor additive. Just treat it like any other clear coated panel.

The UV additive was reported to cost $60,000 per gallon. The clear coat with the additive was reported to cost $2000 per gallon.
