Corvette as a GT
My primary interest in the new C7 is as a GT. Wife and I love driving long distances and I looking for a really cool, fun to drive car to take coast to coast.
I would love to hear of your experiences in the other versions of the Vette as a long distance runner.

30MPG at 1800 RPM and a trunk you can fit anything in...it is hard to beat. The ride is comfortable as the performance is breathtaking when you want it. I've had 2 C4's and 2 C5's. It can only be better with the C6 and C7.

Longest trip for my C6 vert so far is 6 hours one way. Really enjoyed it a ton. I'm planning longer trips this year.
One reason I look forward to the C7 is because it will have better seats with a cooling system for longer open air trips.

Melting Slicks
Of the 23,000 miles on my '05 at least 16,000 of them have been on road trips. Bloomington Gold & Road America annually, Nashville twice, and last fall a run to NC with the Corvette Museum. Drove 1,060 miles straight back in one day. Mileage between 27&30 MPG depending on speed. I'm hoping the luggage area is not diminished on the C7, as that is what really helps for the week long trips. You should not be disappointed.

It's a great road trip car for the reasons already mentioned in this thread. Its only real drawback is ground clearance, which rules out the scenic dirt roads you find some places such as Monument Valley, and it probably wouldn't be my first choice for a ski trip.
As powerful GTs go, the Corvette is probably the best long-distance tourer there is, at least in the USA, where you can get parts and service anywhere.

I've done the trip from Bowling Green, KY to Northern VA twice: once in my highly modified '99 coupe (back in '99) and once in my 2010 ZR1 (back in 2010). Those are the longest trips I've done, circa 11 hours. Other trips have included 6.5 hour rips up to upstate NY and back, down into various parts of North Carolina, etc. I've never had a problem, I've never felt exhausted, and I've always enjoyed the drive.
I have zero doubt the C7 will be any different at all.

Burning Brakes
My year 2000 C5 now has 106,000 miles on it. My SO and I regularly take week-long trips or more in it. Raleigh to Montreal and back was one. When we moved from California to North Carolina, we loaded up everything that wasn't in the moving van, put in a pair of crutches for her (she twisted her ankle on the last trip down the old staircase!) and had a comfortable cross-country trip. I cannot imagine another sports car with the performance and looks of a Corvette where this would be practical. I will finally be getting rid of ol' trusty (the car, not the girl) for a new C7.
Obviously nobody can speak for the new model yet from first-hand experience, but I would be astonished if it didn't provide the same level of all-around functionality and fun as the previous models.

Two C7 features say yes to GT
Feature one, Z51 with the mag shocks. The aero changes should give a bit better stability in cross winds and the shocks a bit more comfortable ride in touring setting (see feature two).
Feature two, the **** that lets you select a touring setting for twelve parameters. Other nice features on the **** are the econo setting for interstate crusing milage and weather setting if the skies open up and dump on you.

My wife and I did Route 66 from Chicago to Santa Monica in my C6. Fantastic trip. We both really enjoyed it. I've got a deposit down on a C7. I'm planning on getting the Z51 and Magnetic Selective Ride Control options (among others). Shoud be a great for cross country trips.

C6s are great road cars. I've driven each of mine 600-700 miles straight thru (12 hours) each multiple times. Drove one of them 16 hours straight one time (with the concomittant stops for gas, of course).
The C7 will likely be just as good of a road trip car, and perhaps better.
My Dad had an LT1 C3. That car would beat you up on long trips. Modern vettes don't tho, and haven't for a long time.

Safety Car
Six round-trip cross country trips already, three in our C5, three in our C6 Z06 with more planned. And will there be similar long, fun road trips in our C7!!!

I think they are perfect for that purpose, comfort, room for luggage, and driving range. I would rather take a corvette on a road trip than my Turbo Porsche

My 2000 C5 with a Procharger and I went up to Salt Lake City for vacation a couple of years ago. I put 2000 miles on the C5 over a week and didn't have a problem averaging 28mpg round trip. This was with 580hp and 130k miles on the original motor and drive-train(clutch included). The modern Corvettes make GREAT GT cars. My currrent c5 goes 2/3 the mileage at best, so I prefer not to drive it the same way I did my previous C5's. But my future C7 purchase will have that job.

My Wife and I have made some serious road trips in our vettes. Once in my C5 we did Dallas to St Louis, then Lexington, Bowling Green, Nashville, Tail of the Dragon. Asheville, Washington DC. to Cincy, back to BG/Nashville, Memphis, Little Rock and home.
1400 miles in two weeks. Great trip no issues.
I've driven from Fort Worth to Bowling Green several times - 10 hours each way. in a C4, a C5 and a C6. The C4 was a little rough but the Z51 C5 and C6 were great.
I heartily recommend a Corvette as a grand tourer.

Not too many other cars out there with as much touring capability as the Corvette, IMO.
