A Z06 minus an engine = no Z06 so I'd let my budget be my guide, and as the ol' saying goes big HP/Tq = $$.
How much dough are you willing or able to spend?
Start there.
Keeping in mind you're no good fast but car-poor & broke.

If you are replacing a motor I don't see any reason to go GM again. You can have an LS7 block built with good forged pistons for the same or less money.

Other than the valve drop issue the GM engine is fine. When you get one of their crate engines you get a good warranty. Not necessarily true with a shop built engine. If you have an engine built with more HP/Tq what are you doing that will let you feel or demonstrate that expenditure? If you didn't take the stock engine wide open for more than three or four seconds at a time you won't do any more with a modded engine.

What went bang? Address what failed. Like I said, I would go with a good builder like livernois or LME and just have them do a forged piston stock rod ls7 shortblock with a nice set of heads. Cost should be the same or less and IMO be a better motor.

Stock short block is fine as long as the heads are fixed.
