That is a tough one. Lots of 160's available if that helps.

Haven't heard of one, but you can get a good 180 here:

Default Vinci also sells one

I got mine from Vince Hi Perf. When I talked with them, they described it actually as more of a 178 and highly recommended this vs. a 160. Good quality but a little pricey, approx. $70 IIRC. I have mine in conjunction with other mods, including a Ron Zimmer tune and car runs great. I live in GA, and coolant temps stay about 180 on the hiway, and highest I've seen in stop and go is around 200.

Correct, but the 2004 uses the same thermostat as the LS2 in C6's.

Unless You Adjust You Fans To Come On At A Lower Temp You Will See Very Little Difference. Thats The Reason For The 160 Thermostat The Tuners Turn The Fan On At 170

My car now stays between 180-187 with the 160 thermostat and the fans adjusted. Stock it says at 200-205.

My tuner told me with HP tuners you can not lower the fan temperature setting but you can increase the fan speed at turn on.

I`m well aware of that. My reasoning is sometimes w/ the 160 on real cold days it takes a long time to go into closed loop and pops in and out of closed loop on my Trans Am w/ a 160 causing poor fuel mileage among other things. I switched to a 170 and no problem. Fans are programmed early in the TA, and will be on the Vette once the t-stat install is done.

Ecklers has a 170 degree thermostat for the C6. Send for their free C6 catalog. It has lots of interesting stuff in it.
