Default COT off with long tubes and hi-flo cats?

I couldn't get the car any leaner on the dyno than 11.5:1 because the ECM was dumping extra fuel to keep the cats cool. I shut off COT using my Predator and was able to get commanded A/F to 12.6. I'm assuming that the factory calculations which control COT are for the factory exhaust setup. I've got Kooks 1 3/4's and 3" hi-flo cats which are located much further downstream from the cylinder head than the stock cats. Is it safe to run this setup with the COT off? Anyone else running like this?

I had my Vette performance tuned by the Corvette Connection in Denver, CO. I am currently tunning my Vette using HP Tunners. I checked the CAT Over Temp Protection and found it to be Disabled. I assume Thomas Graff (of the Corvette Connection) disabled this feature when tuning my Vette. I also have Kooks Long Tube Headers with high flow CATS. I have been running this way for 15K miles and have not had any issues to date.
