In addition to a Z the STI is probably a good choice for some, but it certainly isn't a replacement...

Yes, there's plenty of Z07's left unsold on dealers lots. This is your best bet for getting a great deal. I know I just bought one from a forum dealer for a huge discount off MSRP. You're starting to see dealers panic with all the unsold Z07's and Zr1's and some unbelieivable deals are showing up on 2011's. It's only going to get better as the 2011 model year ends. I'd suggest monitoring cars.com, Autotrader.com, ebay and the forum dealers. Good Luck!
