Wheel bearings
How often, or not, do you re pack the wheel bearings? I don't have a service manual, so, I don't know about any schedules.

Yep sealed bearings, so no repacking them. As for replacement wheel bearings, keep in mind that you have the standard ones, and if you are going to track the car with R compound tires, the bearings will wear out a lot faster, and want to upgrade the wheel bearings to SKF race wheel hubs.
As for the wheel hubs and DD driving, its more of the problem with the internal not replaceable speed sensors going out, than actually wearing out the bearings instead.
So on that note, instead of repacking the wheel bearings at part of the maintenance, spend the time popping the speed sensor connectors to give them a good cleaning, hit them with a light coat of silicone spray to slow down future corrosion problems, and make sure they are reconnected all the way back in the end.

Drifting
Sealed bearings have been used in nearly every automobile for a number of decades. You will find bearings with grease seals and a maintenance schedule in heavy duty vehicles like 250/2500, 350/3500, and 450/4500 series trucks and such. And then it applies only to the front axle. The rear bearings remain sealed, lubricated from the differential oil.
Here is a C6 Corvette wheel bearing hub assembly which is in concept, typical for all coupes, sedans, suvs and light trucks across the auto industry. They simply unplug & unbolt. When an SES code is narrowed down to a particular wheel, replacing the wheel hub is almost certain the solution.
