If you’re talking about the A6, then selecting S instead of D activates the paddle shifters for manual gear selection and provides sportier up shifts. From the owner’s manual
S (Sport Mode): When in
S (Sport Mode), the transmission will work as an automatic until you use the Manual Paddle Shift Controls, which activates driver manual gear selection. See Manual Mode on page 9‐29. While in S (Sport Mode), the transmission will have more noticeable upshifts for sportier vehicle performance

It disables traction control and reduces how much active handling will engage. Allows you to get the car a little more sideways before the Nannie’s kick in. Also, engages launch control if your car has that feature.

Interesting, I had no idea. My 2011 GS didn't come with a manual from the previous owner, so I never combed through one to find out all the little features.
