You're right. Oil change, air filters, battery and cabin filter are all very easy on this car. I always do my own at home.

I just changed my oil on my LS2 2006 Corvette for the first time. I can confirm that the oil plug can easily be reached from outside of the car from the drivers side. I bought a large tin foil pan for 1 dollar and it caught everything after loosening the bolt. It was easy to get the bolt out of the way and not drop it in the pan. The filter is right there behind the bolt and also easy to reach. It was easy to turn with my hand and just place it in the pan. The car sits fairly flat, so maybe the only thing I'd change is to raise up the right (passenger) side of the car by driving on 2x12s to make sure all the oil comes out. Without that though, mine had to be near 100% empty. I'll put mine in stilts another day.

There's no need to get under the car at all, so your size doesn't matter either.
You can lay on your back and easily reach the drain plug with a wrench. Same thing with the oil filter. All you need is a low profile drain pan for the old oil.

I usually punch a hole in the bottom of the filter with a center punch, before I remove it. Let the filter drain, and then remove it....way less messy!
