Look for a C2, I can work on them without worrying about clock springs, indexing Windows, batteries draining, torque tube bearings, getting locked out, fobs not working, no traction control, air bag lights, trouble codes, fuel tank pumps gas gage, etc.

To be honest I would probably take the insurance $$$ and use it to help the kids.

From what I read on this forum, I bet I am the ONLY 2007 coupe owner who would be perfectly content with replacing it with another narrow-body LS2. With a good tune, of course.

I would look for a convertible just like I have now...maybe a bit newer but no older. If I found a great deal on a 427 Vert, I would be open to that also.

but mine would still be a vert. I wouldn't rule out a LS3 but I have gotten used to the 3lt and larger brakes (can't recall it's code)

R8-v10, unless the new mid engine vets are out instead.
Its not that I don't have anything against the Vets, but knowing their limitations, and having to spend another month dialing a new vet back in to how I have my vet dialed in now, can say it's just not worth the time again.
As for the C-7, with direct injection, going to just way pass.
Ford's engines with direct injections are old enough to see the problems with Carbon fouling on the intake valves (head have to be replaced the turbo engines), and give enough miles on the GM direct injection motors, will be seeing the same problem as well.
Note, you can always solvent clean the heads with them on the car still on N/A motors, but pushing this much solvent to clean the heads, can also cause problems with the piston rings and cats as well.
P.s. By the time the mid engine vet rolls into production, you can bank that GM will have ditched the direct injection motors by then as well.

If I were to replace it with another C6 it would be a 2013 GS convertible. I had a 427 but could no longer shift due to a knee injury so another 427, a Z06, or a ZR1 is off the table. I would most likely step up to a new C7 Z06 convertible with auto trans or wait for the C8.
