Just for the sake of comparison...here's how a 2009, the slowest of the GTR's, faired against my car at various power levels for each vehicle.
I used to run what you were running (11.7 @ 122 off a 1.8 60') and here's how these runs turned out at those power levels. First video 09 GTR with just midpipe/tune. Got him down low but he stops my pull. That's just a lowly 09.
Second video now is that same GTR with full bolt-ons and on E85 fuel. I got the jump and it was walk city for the GTR.
Last video is that same GTR on same mods as second video.
I can pull him but not by much and that was me on about 600 RWHP. His GTR at that power level runs 10.33 @ 135mph. I can yank him in 3rd and pull him in 4th. Fast forward to end of video for roll race at the 55 second mark. Currently I'm at 640RWHP and I can give him jump and stop his pull and lurch ahead of him at speed.

I'm glad you had fun but just so you know you beat the driver not the car. The 2015's will trap well over 125mph in the 1/4 mile and therefore from a roll 125 > 120-123. There is more to the car than just mash the gas and go.

I have not seen stock GTR's trapping well over 125mph. 121-124.
From a rolling start, a Vette weighing 3350 w/ driver vs. a GTR weighing 3800+... both making about the same power to the wheels (maybe a slight edge to GTR in this case)... Vette wins by a nose.
However... given the guy's car was brand new, it is very possible he wasn't experienced enough to wring it out and get every last ounce of power out of it.
From a rolling start, a Vette weighing 3350 w/ driver vs. a GTR weighing 3800+... both making about the same power to the wheels (maybe a slight edge to GTR in this case)... Vette wins by a nose.
However... given the guy's car was brand new, it is very possible he wasn't experienced enough to wring it out and get every last ounce of power out of it.
