Matrix material from the catalytic converter. Unfortunately you just spent some money. Be careful the material can bunch up in the cat and shut down flow strangling the engine. One side or both ? I would not drive car anymore than absolutely needed. You don't want to clog up the new Corsas ----

You don't say what year your car is, but it's possible the catalytic converters are still under the emissions warranty. I think it's something like 8 years/80000 miles.
But ... did installing the Corsas cause the problem ... such as, during installation they (or you or whoever did the installation) bang around on the cats to mate the new system. Or maybe it's just coincidental. Or it may not be cat material at all ... could be something that was already in the Corsas.
Cats certainly do go bad. My wife had a Caddy SRX and it needed both replaced at two separate times. Sounded like rocks rattling around in a tin can. Fixed under warranty, but not cheap if you have to pay for it.

I know someone *ahem* that has gutted cats before. That is definitely cat material. Be careful. I have been told the material is toxic to breathe if broken up. Dont huff your exhaust lol

Material already ID'd, but I can venture as to why the cat combs are breaking apart… when the old (OEM) exhaust was removed someone used a hammer or similar tool to break loose the exhaust pipe clamps or to bang the mid pipe off of the header/cat/pipe assembly. I have seen this happen before and two things could happen (1) is damage is minimal and only will spit a out a few pieces or (2) major and the cat comb collapses and blocks the exhaust and then there is a big problem

Update: Finally removed the cats and the front side (at manifold) honey comb looks to be in perfect shape. I can't see the rear honey comb up in the pipes so I'm assuming that's where it's deteriorating. I was hoping to remove the cats and have a bunch of material fall out but no. (Broke off a manifold stud too....super frustrating, car has 8,000 miles on it) I'll update when new cats go on next week.
