So I have a 2006 coupe with the standard suspension. The one with the pencil thin sway bars. This Friday my Christmas present (Eibach anti-roll sway bars) are going to be installed. They are basically the same size as the Z06 ones. For anyone who has upgraded just the sway bars, how did it impact the ride, cornering, etc....?

you can expect a huge improvement in handling! well, my experience is with the z51 sway bars on my base coupe.
