"I wait for my oil temp to reach XXX before going full throttle...."

180* is when oil is warm enough for WOT, if WOT is prudent.
REMEMBER - give time to the trans & diff to warm up as well. They also need heat.

With Mobil 1 5W-30, I don't think it is a huge deal. But I also wait, at least until the water warms up. I feel that it is more of a thermal expansion issue than a motor oil viscosity issue, since the oil behaves like a lower weight oil when cold.

The problem with cold oil is the viscosity is much higher than normal and you will notice the oil PRESSURE is much higher than normal. The higher pressure builds up because the higher viscosity oil will not flow through the oil journals as it should for proper lubrication. Running the engine hard under that circumstance could be starving essential rotating parts of the engine and cause undue wear. If you will look at both the oil pressure reading and the oil temperature reading, you will find a number where the oil pressure finally reaches your normal pressure readings. At that point your oil temperature reading will be your "good to go" temperature reading. When that occurs, the engine can be used to it's full abilities with all the proper locations receiving the designed oil pressure.

Bought my Vette from a retired pilot who knows a thing or two about WOT and said he waited until 150 degrees before getting on it and that's what I do....

I've always felt that If you’re able to drive a corvette every day of the week practically year round .... then you can afford the luxury of 15 minutes or more of normal driving to let the oil get up to 190 before you get on it.
In some small way letting it warm up to a higher temp will allow it to go to 150 - 250K and more more reliably before needing a major rebuild. Even when driven .... briskly.
I admit it rarely goes below 30 here all winter but if it’s -10 below and it will take you 45 minutes or more to warm up the engine not to mention the tires…. why would you want to stomp on it anyway?

I was standing next to a real C6R(18" away) and the car had been sitting for some 3 hours. Even before that, it had only been moved from the transporter. The engine was at ambient temp of 85 degrees.
The guy got in, started the car, and immediately started blipping the throttle to 5-6000 RPM. The engine didn't blow up.
My ears were ringing for several days after that, as I was standing next to the exhaust outlet.

I don't ever go WOT. I won't take the rpm's past 2500 until it is at operating temp 185 - 200.
There was another post where someone said it takes 15 - 20 minutes of normal driving to reach 165. You must be talking when the air temp is -20. It only takes me about 5 minutes just putting through the burbs and she is ready to go.

The only way I can get my oil temp up to 180 degrees with a 70 degree ambient, is to drive in first gear at 5000 RPM for 10 minutes.
I don't do that.
Driving hard(WOT) at Talladega with 90-95 degree ambient, I only see the oil temp hit 200 degrees.
