Does the LS3 have sodium filled exhaust valves?

No, LS3 uses solid stem exhaust valves.

IIRC they are non-sodium filled, hollow stem.

Look in GM Performance catalog it clearly states the LS3 heads uses a solid exhaust valve. The intake is a hollow stem but that is not what OP was asking.
