I went from a LS2 to a LS3. I found it to be a noticable difference. The 3 fuel mpg is a little lower.. But the power was noticeably more. From off idle to the rev limiter. My 6.0 ran good. But I was much more impressed with the 6.2. I would find it hard to return to a LS2.

If you've considered the cars as a whole and the only difference is the engine then you should probably go LS3 if you can afford it.
However, if you're considering the engine choice as part of the overall package, condition, and cost is an issue then go with the best overall combination. It may turn out to be the LS2.
I have an 05 coupe Z51 M6. I picked it because at the time I purchased that was the best overall car I could afford and am completely happy with it.
