The purpose behind the thermostat is not only to allow the water to remain in the block until it reachs a certain temperature but it also allows the water to remain in the radiator long enough to cool. If you allow too much water to constantly flow then it will never have enough time to cool in the radiator and you'll have overheating issues.
The best thing to do is buy the proper thermostat for your application and if you want the engine to run cooler then you also have to have the fans reprogrammed to come on earlier.

Since when did a thermostat start costing $60? I know I can pick one up from O'Reily's for like $20.

I have read that you can change the temperature of the stock thermostat by adding a shim under the pin in the top of the housing. The info I have seen said a .1" shim would change the stock thermostat to a 180 degree thermostat. I have done this to mine over the winter but have not started the car as of yet because of all the other mods I am doing. Will be more than likely an other few weeks before I can get the car on the road to know for sure if it worked.

On mine it took an 1/8 inch shim to get 181*. If you have an 03 or newer you will need an earlier thermo to do the pin mod. On an 03 you can cut the spring. The problem with that is if you cut too much you can't add back spring.
