Next week I'm throwing on a set of long tube headers without cats. I plan on having it tuned shortly thereafter and having the O2 sensors tuned out. Do I even need to reinstall the O2 sensors? Can I just put a bolt in its place?

You do, of course, need the 2 front O2 sensors.
The rears can be taken off, the pipe plugged, and the wiring connectors just taped over to keep dirt out. Then have the tuner turn off the rears. Until you get it tuned it's not a problem to run without the rears; the DIC will eventually set a code P430, but it has no effect on the engine or the performance.
Good luck with the no-cat decision - it will stink really bad.
