When does the z06 go into the low octane

Generally, when it detects knock through the knock sensors.
Eliminate the knock and it will start using the high octane table.
KR can and does happen even with stock timing values if the VE/MAF tables aren't adjusted properly (even stock cal). Many things can cause knock or false knock.
Monitor knock and if you're seeing it, get a custom tune.

The ECM counts " occurances of knock " When it reaches an unknown number of occuranses it will drop into the Low octane table---Whether or not the knock is real or false
The only way to set the ECM back into the Hi octane table is to empty the gas tank and refill over 3/4's of a tank-- best is to fill up---The ECM is assuming you got a bad tank of gas---so it reacts accordingly by dropping into the low table---Many people continue putting in only $20 of gas at a time and their ECM never resets back into the Hi Octane table-- Good practice is to always empty the tank and refill completely

Monitor your knock learn factory PID. If it shows 1.00 you're running fully on the high octane table. At 0 you're in the full low octane table. In between is in the middle at that percent.

What T Vert said.... There is a scalar multiplier between your high octane and low octane table...
There are parameters that must be met, and if knock is detected, and knock retard called for, it will ding the knock learn down a notch.... It will continue to do this until either 0 is reached, and full low octane is called for OR no more KR is detected...
There are only a couple ways to get this to immediately go back to 1, the easiest is if you have hptuners, do a write entire.
As you drive, the computer is constantly trying to return you back the high octane table, however, its a very slow process. It will ding you much faster than giving it back. Over time though, assuming your high octane table has no KR in it, you will get back there...
The windows are set by MAP and RPM if I recall correctly, for learning up or down...
