Popularity of White
Couldn't help but notice the initial popularity, then long decline, and eventual resurgence of white as an exterior color for the C5/C6/C7s

I think Corvette follows general color trends as your statistics show. Also, some Corvettes look better in White, like the C7 for instance (in my opinion).
Trivia - White is the only color that has been available on every year Corvette. 1953 = 100%:
I ordered my 2001 Corvette in White with Red to honor the 1953 tradition:
The blue fender stripes honor the 1957 Sebring race car scheme (sorta):
My scheme also follows the 'All-American' Corvette tradition. I served to defend those colors and I am very proud to display them.

We see a ton of white cars out here in the desert ALL the time - - interesting percentages . . . .

I have had maybe over 50 cars in my life but never a white and before I die I would like a white car !!!!!!!!!!

I have never been a big fan of white sports cars. Ive always felt they were kind of bland until I saw a white C7. All the black vents and red calipers really make the car stand out. Also looks good with red interior.

white Corvettes
I have owned several different colors of Corvettes over my life. I currently have a 2001 speedway white coupe and a black 1984. The first new corvette I purchased was a red 1981. I traded that car for a new 1984 white with a red interior. The 1984 was my favorite color combination. White and red together just pop IMHO. My speedway white 2001 has light oak interior but I am considering changing it to a red interior. White is so easy to keep looking clean and my favorite color for a Corvette.

I had a white with TR interior '95 coupe and that was a great color combo. I think with the advent of the C7, white just looks great on the car, thus it is so popular now.

My favorite 'Vettes in white are the last two or three years of the C3 line.
Just something about that body with all of the integrated spoiler, air dam and wheel opening treatments that just seem to enhance the effect of the color white. Very classy, very clean!!
Would still like to have one someday!

Safety Car
I've never been a big fan of white, but when I went to look at a '97 (not knowing it was Arctic White), I just had to have it. It has grown on me over the last eight years. White has a clean, classy look to it.

Part of the trend is also the black wheel trend along with carbon fiber/matte black accents. They really contrast great with a white car. And the C7 does look best in white its shows off the lines.
