I tried a few times but apparently my car isn't cool enough

I have not raced on at the track (road course or 1/4 mile) but have seen some at the 1/4 mile track. Although I was racing I never had a chance to line up against one. Based on the times/speeds I was seeing they will beat a stock C5Z assuming it was driven adequately. They were typically .2-.4 faster min and about 4-6 mph faster in the traps.
They are capable cars.

I don't think that statement is based on any amount of documented fact.

They produce as much low-end torque as an LS7, so I'm not sure where that came from, and the TR6070 gear ratios are exactly the same as its predecessor's with an additional overdrive up top, so there is no extra shifting
Would I beat one? I'm pretty confident I would. Are they quicker than a stock C5Z? According to the fast lists, yes.

They sure are! I've got over 400 laps in driving a new Stingray giving demo laps for HOD Pacific Northwest. I'm very impressed with it. The car is a bone stock 2014 Z51 with stock tires, brakes, and nothing removed but the dealer sticker. The car turns in amazingly well, handles transitions with ease, and is just generally a super easy car to drive fast. All that and we had the tires over inflated to reduce wear.
All things being equal, I believe it will out handle an equally stock C5.
Let the flaming begin.

Drifting
One sidled up to me on I-5 somewhere in Kern County one day. We leaned on it for about half a mile and he quit. We stayed pretty close; my foot was floored, but it's not like he just marched off into the distance. I was surprised to see that he couldn't just blow my doors off. I'd agree with the posts authored before mine; it certainly cooled my urge to scout out a dealer showroom.
In the turns it might be 'all driver'... I "lost" him by 3 car lengths at the 152(?) off ramp without even squealing the rubber. He disappointed the dickens out of me... treated that machine like a garage queen in the turn. In fairness, my suspension is PFADT sways and shocks. The consolation for me is, I can stall even longer and save up for a 3-5yr used c7 Z06 now because the Stingray 'curiosity and appeal' has completely waned.

A C5 Z06. I can still remember what mine handled like before the mods started.
Remember, I'm comparing apples to apples right off the showroom floor. No upgrades of any kind. Even a slightly upgraded C5Z, better tires and brake pads and maybe an alignment, will hang right with the Stingray. The car I was doing the demos in was bone stock. A friend of mine with a highly modified and well set up C6Z commented that the car seemed to turn in as well as his.

That statement is easily contradicted by documented fact. The LT1 is especially torquey down low relative to C5 Corvettes, this is due to the extra displacement, variable valve timing, direct injection and superior compression ratio. Also as already stated above, the TR6070 has identical gearing to the MM6/6060 and even longer gearing than our M12.
The car is faster in every respect than a C5 Z06, the car is the benefactor of two generations of further platform development. It's got a stiffer chassis, bigger brakes, more powerful engine, better drivetrain and an active electronic differential.

personally I think the stock C5Z will need to be on top of his game and if the C7 Stingray is slow or hesitant...then the C5Z will win maybe.
that all being said....the new C7 is not that much more fast than a C5Z....so I am not convinced the money for the new version over our C5Z is worth the increase in performance...even stock to stock.
Add CAI, Headers, Tune, Ported Throttlebody, Cat Delete and I think there may be little reason to make the swap.....other than the comfy interior. As a drivers car though....I dont think the C5Z or C6Z for that matter.....really loses much in handling and power to weight ration speed.
Just my opinion.
